This soup I had at a dear friend of mines. I couldn’t get enough of the taste and I tried to recreate what I tasted.
Something about the lime in this meal is so addicting, I crave this soup all the time!
What I love about this soup is that it’s perfect for every season.
It’s nice to have soup at winter, it’s a cozy meal perfect for those cold nights at home and with this soup you can enjoy a cup keeping you warm.
During summer it’s so refreshing to have anything that involves lime which this soup has and along with that zesty taste to it!
The absolute best part about this recipe is that it’s super inexpensive and doesn’t involve a lot of hands on attention.

There are many variations to this recipe, however this is how I enjoyed making it! Feel free to add your own little touches to it!



You’ll need:

• olive oil
• 1 medium onion
• 1 medium jalapeno
• 4 cloves of garlic
• 1 chicken breast
• 6 cups of chicken broth
• can of diced tomatoes with chiles
• oregano spice
• cumin spice
• cilantro
• 1 avocado

Serves: 6

Total time: 1 hr 25 minutes


Instructions

1. Dice onion and jalapeno.
You can add celery if you like them, I don’t, but feel free!
Mince the garlic.
Cook onion, jalapeno and garlic in olive oil over medium heat for 5 minutes.

2. Add 1 chicken breast (yes 1 will surprisingly do for this meal!)
Add your cans of chicken broth, canned tomatoes with chiles, oregano and cumin spices to the pot.
Bring the pot to a boil over high heat.
Next, reduce the heat to low.
Place lid on top.
Let this pot simmer for 1 hour.

3. After everything has simmered for 1 hour with lid on, carefully remove the chicken breast from the pot.
Use two forks to shred the meat.
Return the meat to the pot.
Squeeze your lime over the pot so that all the juice goes into the soup.
The more lime, the merrier, feel free to scrape out all the juice into the pot.

4. Next, dice the avocado and add a few chunks to the pot.
Chop up some cilantro as well and add it to the pot.

5. Now that everything has boiled for 1 hour, you’ve add the last little touches, it’s ready to serve!* Side dishes: Some people like to add chips to this meal, that’s perfect for summer.
In this case, I boiled rice noodles, perfect for this time of year, winter!
